Ana de Altún
We try to respect the natural fermentation processes as much as possible, with a restrained intervention, to create an authentic wine that reflects its origin. We harvest by hand, and after a brief cold maceration and gentle pressing, the free-run juice undergoes alcoholic fermentation in French oak barrels at 16ºC for 20-30 days. Finally, it is left for 3 months on its lees in tanks with weekly 'battonage'.
Colour: Clean and bright appearance, pale golden colour and very glyceric.
Nose: Hints of citrus (pineapple) and a hint of bakery, which increase once the glass is swirled.
Palate: The palate is pleasant, with a fruity character. On the palate it is tasty, well balanced, with excellent body and a long finish.
