  • C.D.O. Priorato

The grapes come from three small plots of old vines, aged between 80 and 120 years, situated in Gratallops on licorella soils with a clay-limestone subsoil. Viticulture is organic, with some plots cultivated using biodynamic methods, and all work is carried out by hand. Following the hand-harvest, the grapes are gently pressed with the stems for seven hours. The Garnacha Blanca ferments and is aged in an 870-litre Austrian oak foudre, whilst the Macabeo and Trepat Blanc ferment and are aged in a 300-litre French oak barrel. The wine is then aged for seven months at a controlled temperature.
