Domaine A. Cailbourdin Pouilly-Fume Nanogyra

It comes from Sauvignon Blanc vineyards situated on the clay-limestone slopes of Pouilly, on Kimmeridgian marl. The vines are approximately 40 years old and the vineyard is managed through regular ploughing, thinning and leaf removal to naturally control yields and promote grape ripening. After the harvest, the grapes are pressed immediately using a pneumatic press, without pre-fermentation maceration. The must undergoes static settling and ferments at a controlled temperature with indigenous yeasts. The wine is then aged for a long period in tanks on its fine lees, without malolactic fermentation, to preserve its freshness.

Colour: Bright pale yellow with greenish highlights.

Nose: Aromas of white flowers, such as hawthorn and acacia, accompanied by hints of blackcurrant buds, pineapple or white peach depending on the vintage, against a clean mineral backdrop with hints of flint.

Palate: A full-bodied, powerful and long-finishing wine, with good richness and a pronounced mineral character. Over time, it may develop more complex notes of quince, mango and even hints of truffle in some vintages.

Pairing: Ideal with seafood, oysters, white fish, goat’s cheese, ceviche, grilled vegetables and mild Asian cuisine.

Recommended serving temperature: 10 ºC.
