Winemaking
The grapes are espaliered and cultivated according to the regulations of the Balearic Council for Ecological Agriculture. In the month of August the grapes are hand-picked, followed by a rapid transport to the winery in order to prevent possible oxidation.
Tasting note
After the pressing the ripening takes places in stainless steal receptacles at controlled temperature and a following ripening in barrels made from french and american oak.
