Winemaking
Under the Protected Geographical Indication (PGI) Vinos de la Tierra de Castilla, we elaborate this wine with its own personality and character in order to give it an identity that makes the difference. The grapes are harvested at night and at dawn in order to avoid oxidation at the beginning of fermentation. Subsequently, fermentation is carried out at 17 - 18ºC to avoid loss of aromas.
Tasting note
It is a fresh wine, with an air of renewal that seeks a younger market by introducing non-native grape varieties that are perfectly adapted to the climate and terroir, offering fruity aromas without losing the characteristic acidity of the grape variety. A wine with an attractive pale straw color, with greenish reflections. Very bright. The nose reminds us of fine floral notes (acacia), with intense aromas of stone fruits such as pear and vegetables with nuances reminiscent of anise and fennel. The palate is lively with a lingering aromatic finish that drives its flavor.
