Winemaking

We harvest at dawn to avoid any oxidation and guarantee the freshness of our grapes. Xarel-lo is an autochthonous grape from Penedès and the main variety in the blending of our sparkling wines. A grape with character and structure, ideal for long ageing. The varieties are made separately. The grapes are refrigerated prior to pressing (to avoid loss of aromas). Must pressing yields of 50%. Static racking at low temperature. Must fermentation at 16-18ºC with selected yeast. Base wines with an important acid component and a fairly low pH for long ageing. After tirage, the second fermentation and ageing is carried out in cellars at a depth of 30 metres, at a constant temperature of 14ºC throughout the year.

Tasting note

Pale yellow colouring, clean and bright, with abundant fine bubbles. On the nose, fresh fruit harmonised on a creamy background with hints of bakery and nuts. In the mouth it is very fresh and balanced, quite structured and harmonious despite the total absence of added sugars.
