Winemaking
Small plots located at different altitudes in the municipality of Arafo. Selection and manual harvesting in 15 kg crates, destemming and light pressing in a pneumatic press. The must is racked 24 hours before fermentation at a controlled temperature of 20º for 10-12 days. It is then aged for 6 months with weekly stirring of the lees in steel tanks. Bottling is done without fining and filtering, so small precipitates may appear.
Tasting note
A wonderful white wine from the Guímar Valley, an ideal place for the Listán blanco grape variety, which is the sole protagonist of this wine. It is aged on its lees for 6 months with weekly stirrings that give it a very aromatic character, with ripe fruit, spicy touches and a fruity and fresh palate.
