La Bota de Mateo

The vineyard is over 90 years old and planted on ungrafted vines at an altitude of over 1,400 m above sea level. The viticulture is traditional and respectful, helped by the trade winds. The grapes are harvested by hand in 15 kg crates, destemmed and lightly pressed. After a 24-hour racking process, the wine is transferred directly to the old cask filled with manzanilla de Sanlúcar, where it undergoes alcoholic fermentation with its own yeasts, and remains on its lees for 13 months.
