Winemaking
Manual harvesting in boxes and later selection of grapes on a double selection table. We maintain a cold maceration with the skins before pressing. Part of the must (60%) is fermented in French oak barrels, the rest (40%) in stainless steel tanks. After fermentation, the wine remains 8 months on lees in concrete eggs and 500L foudres.
Tasting note
Color: Intense yellow colour with golden reflections, clean and bright.
In nose: It is intense, exotic ripe fruits, white flowers, aromatic herbs, complex, mineral, spicy and balsamic background.
Palate: In the mouth it is long, balanced, expressive, fruity and with a long spicy finish.
