Winemaking
The carefully selected grapes come from low-yielding vineyards and individual plots reserved for the production of our Blanc de Blancs white wine. After a gentle pressing of the whole bunch, fermentation is carried out in small stainless steel tanks at a very low temperature of 12-14ºC for approximately one month.
Tasting note
Color: Pale yellow with shades of lime.
Nose: Very pleasant aroma. The notes of freshly cut green apple predominate over a tropical background. In a second layer, hints of apricot and peach appear. Very subtle citrus finish. Palate:
Palate: Fresh with a marked and persistent acidity. Its passage through the mouth shows a pleasant tapestry of textures, with a refreshing and sparkling finish, fruit of the carbonic residual fermentation.
