Winemaking
Fermentation in barrels of about 600 l without temperature control or sometimes in stainless steel vats. Aging in barrels. No debourbage, no lowering of temperature during vinification, no addition of yeast, no fining agents, limited use of new wood (3-4%), aeration of the wine to allow oxygen to reach it, SO2 is added during aeration.
Tasting note
The rich and complex style of the house is perfectly represented in this wine. The concepts that evoke a faithful image are those of maturity, precision with a touch of wildness.
