Winemaking

This is a young wine crafted with the tips of bunches we would normally select for our reserva wines. This wine combines the most innovative grape sorting methods as well as the very traditional method of carbonic maceration typical of the Rioja Alavesa region.

Manual harvest in boxes of 12 kg of grapes from vineyards of 60 years of average age. Temperature controlled prior to fermentation in specially designed cold rooms for 24 hours (4-6 degrees). Grape selection on table and separation of shoulders and tips. This wine is made from the tips by the carbonic maceration process.

Tasting note

Color: Picota violet high layer.

Nose: Intense and fine with floral notes, lilac, violet caramel, aromas of wild berries, strawberry cream and blackberries.

Palate: Sweet and fleshy. Fruity, blackberries, gooseberries, blue flowers, dairy and liquorice touches.
