Cold pre-fermentative maceration at 8ºC for 3 days. Fermented in French oak barrel of 28ºC with autochthonous yeast selected from their own vineyards. Stomp twice a day for the remaining 5. Maceration with skins for 21 days and malolactic fermentation in new French and Central European oak barrels.
Color: intense violet cherry colour, almost black.
Nose: It looks concentrated and very rich in aromatic nuances, frank and well-drawn, with a predominance of memories of very well ripened fruit, milky tones, preserves and a very fine memory of roasted chestnut that seems to open the way to spicy sensations (cinnamon, pepper, cloves), fine toasted (coffee touch) and mineral.
Palate: Extraordinary structure, solid and powerful, it is said to be solid, with a lot of everything and everything in great balance; the tannins are whole, as it should be, is fleshy, very powerful in flavours and very expressive in aromas of mouth, with refreshing balsamic notes (eucalyptus, menthol) along with the rich range of nuances that were perceived in the nose. Long persistence, with a bitter-toasted touch at the start and a wide and complex aftertaste dominated by the clear memories of a perfectly ripe Tempranillo.
