Winemaking
Under the Protected Geographical Indication (PGI) Vinos de la Tierra de Castilla, we elaborate this wine with its own personality and character in order to give it an identity that makes the difference. The grapes are harvested at night and at dawn in order to avoid oxidation at the beginning of fermentation. Subsequently, fermentation is carried out at 17 - 18ºC to avoid loss of aromas.
Tasting note
It is a wine with an air of renewal that seeks a younger market by introducing a blend with non-native grape varieties that are perfectly adapted to the climate and terroir, favoring maturation in oak barrels and offering aromas of red fruits without losing the characteristic acidity of the grape variety. A wine with an attractive ruby red color, with violet notes that evolve into a brick color with time. The nose reminds us of aromas of red fruits, and tones of tobacco and chocolate due to its time in oak barrels. The palate is full-bodied but velvety, with a good palate and structure, with hints of dark chocolate and cedar.
