Winemaking

The grapes are harvested by hand at night to ensure that they arrive as fresh as possible. They are then placed in an uncovered cement tank in stainless steel, pumped over and pumped down daily, macerated for 28 days, pressed and aged. The grapes that go into this wine come from two plots on the Balbaina estate, one of them in Jerez and the other in El Puerto de Santa María, and more precisely from the slopes, where the soils have an initial organic layer and the albariza soils at the bottom provide freshness to the plant and help the grapes to ripen homogeneously, as well as bringing minerality and salinity to the wines.

Tasting note

Vara y Pulgar 2018 is a wine from Cádiz made from native Tintilla grapes, rescued from oblivion to produce this different single varietal red wine. It is a fresh and long wine with mineral notes that make it different. Currently it has been recognised by the critic Eric Asimov of the New York Times as one of the best wines in the world. The name of the wine is a tribute to the "Art of Pruning" as one of the most complex and special jobs in agriculture, and one of the most distinctive pruning is the "Rod and Thumb", which consists of forming from the trunk of the vine two arms "a rod" of 8 buds or more and a "thumb" of 1 or 2 buds.
