Winemaking
Harvest in 15kg boxes, double selection table (bunches and berries), fermentation in small French oak vats and maceration. Fermentation of destemmed grapes for 28 days. Late malolactic fermentation (May - June) in new 500L French oak barrels. Ageing: 18 months in 500L barrels and 3 months in the bottle in a cellar dating from the 18th century.
Tasting note
"Los Yelsones" represents the magic of a vineyard in the upper area of San Vicente de la Sonsierra where the optimum ripening of the fruit expresses its most complex fruit-floral character and the yelsones give it its freshest and most chalky character on the palate.
