Winemaking
Made with 100% Verdejo from old vines in glass (20%) and trellis vines over 15 years old (80%) grown on 3 types: pebbles, sandy loam, gravel and clay. Cold maceration of 30% of the grapes, fermentation at 15º in stainless steel tanks for 23 days. Aging 45 days on lees in stainless steel tanks.
Tasting note
Color: Straw yellow colour with greenish reflections, clean and bright.
Nose: Very clean fruity notes, with clear hints of fennel and memories of stone fruit, aniseed and some light notes of tropical fruit.
Palate: Fresh and fruity, with a lightly balsamic unctuous mouthfeel and a fruity aftertaste with a touch of bitterness that gives it the characteristic elegance of the Verdejo variety.
