Gentle pressing of the clusters in a vertical press. Static racking of the free-run juice for 48 hours. Fermentation in new French oak barrels for 24 days at 20 o C temperature. Thirty months in new French oak Bordeaux barrels. Bottled with gentle filtration without fining.
