Manual harvest, sorting and destemming. Fermentation for 21 days in wooden vats. Temperature control. Pumping over twice a day during fermentation. 100% malolactic fermentation. Aging 100% in oak barrels (18 months).
Tasting note
Intense ruby red color. Refined and fresh nose. The palate is dense, rich, with great freshness and very good taste. Fine, spicy, tangy and very digestible tannins.
