Quincha Corral is the most personal wine of Toni Sarrión. So much that he literally makes it with his own hands, making the comebacks himself. It ferments in open barrel deposits in which there is a micro-oxygenation that gives it a very special color. Toni carefully selects the oldest Bobal vines planted in two very specific vineyards and thus obtains its most complex and opulent wine. A wine of travel, which will give much pleasure with the passage of time.

Cold maceration on vintage boxes at 6ºC. Double selection table (bunches and berries), destemmed, lightly crushed. Alcoholic fermentation in open barrels of 225 liters at 28ºC for 12 days with manual pigeage. Post-fermentation maceration for 10 days. After the manual discovery, only the flower wine is used for aging.

Aged for 18 months in French oak barrels of 225 liters. Malolactic fermentation in barrel and batonage for 5 to 8 weeks.

Tasting note

Color: Dark cherry, very covered with violet reflections. Ink the glass. Intense, clean, dense.

Nose: With notes of black fruit in seasoning accompanied by somewhat fresher red fruit, notable weight of spicy notes, soft toasted, with touches also of dark chocolate and tobacco. Delicate balsamic memories also appear.

Palate: A wine with body and structure, sweet tooth in the center and with present tannins. Fresh, with sensations of low bush, spicy notes and ripe fruit melted with oak. Long finish.
