Winemaking
Harvested by hand in boxes. Gentle destemming and crushing. Intense maceration reaching 30 degrees during the last days of fermentation. Daily pumping over and two delestage at the end of fermentation. Malolactic fermentation in stainless steel tanks. Bottled after a brief filtering so as not to alter the organoleptic characteristics of the wine. Long resting in bottle before release.
Tasting note
Cherry red color of high layer. Clean, bright and dense. The nose is very complex and intense. Notes of red fruit, black fruit, balsamic and a marked mineral character. With the refining in the bottle and we begin to appear at this point the typical tertiary reserves of the classic Ribera del Duero reserves. Very balanced, with a long aftertaste and a long life ahead. Decanting is recommended before drinking.
