Winemaking

Traditional elaboration 100% destemmed. Pre-fermentative maceration for 3 days at a temperature of 6ºC, with gentle pumping over and light aeration during this phase. Alcoholic fermentation: 9 days with temperature control between 26 ºC and 28 ºC, pumping over 1 or 2 times a day during the first phase and finishing with a pumping over. Post-fermentation maceration: For 10 days. Directly racked to French oak barrels 30% new, 30% second wines and 40% of two wines where malolactic fermentation will take place. Aging of 16 months in French oak barrels.

Tasting note

Integrated viticulture, respectful of the environment, minimal intervention, perfect adaptation to the terroir and without the use of herbicides or systemic products, in harmony with the biorhythms of nature. Organic fertilization.
