With an early harvest, the life of this Palomino from the Balbaína Alta vineyard begins. Hand-harvested with rigorous selection both on the vine and at the sorting table, only the highest-quality grapes make it to the press.
After pressing, the must is placed in stainless steel tanks at a very low temperature (6-7°C) for about 24-48 hours. After settling, it is transferred to another tank, where spontaneous alcoholic fermentation begins with a controlled temperature increase up to a maximum of 15°C. Fermenting at such a low temperature helps preserve the grape’s varietal aromas.
After 20 days, once fermentation is complete, the wine is racked along with the fine lees still suspended in the liquid.
Aged for 5 months on lees in stainless steel tanks. It may contain natural sediments.
Bright and crystalline golden-yellow color with intense greenish reflections. When swirling the glass, a high density is observed.
An intense nose, perfumed, floral, and citrusy, with a tropical touch represented by notes of roasted banana. A balsamic background with hints of anise is also appreciated.
An intense wine where fruit and minerality take center stage in the aftertaste. This vintage showcases great acidity, contributing to a strong verticality and transparency in terms of minerality. Its sapidity translates into freshness and an omnipresent saline concentration. A white wine that unmistakably expresses the albariza soil from which it originates.
